Pekmez,is a molasses-like syrup obtained after condensing juices of grape must.
“Kofturs” (made from pekmez) are dried in a local villager’s terrace.
Try to taste “Koftur” in Cappadocia.
Ortahisar Castle is lookin at its mother-Erciyes Volcanic Mountain -one of the creator of Cappadocia-is not active now.
Locals are using grapes for cooking pekmez and the grape branches for the cooking fire.
There are several creative method for mashing the grapes for pekmez 🙂
